This Bruschetta Pasta Salad is a vibrant mix of juicy tomatoes, fragrant basil, and creamy mozzarella pearls, all tossed with tender orecchiette pasta. Perfect for picnics, potlucks, or any sunny gathering
Ingredients
- 6 cups cooked orecchiette pasta
- 4 Roma tomatoes, diced
- 1 small red onion, diced
- ½ cup fresh basil, chopped
- ⅓ cup shredded parmesan cheese
- 8 oz mozzarella pearls
- 1 tsp garlic powder
- 3 tbsp olive oil
- 2 tbsp white balsamic vinegar
- Salt and freshly ground pepper, to taste
Instructions
1️⃣ Cook the orecchiette pasta according to package instructions. Drain and rinse under cold water to cool.
2️⃣ Dice the tomatoes and onion, and chop the basil.
3️⃣ In a large salad bowl, combine the pasta, tomatoes, onion, basil, parmesan cheese, and mozzarella pearls.
4️⃣ Drizzle olive oil and balsamic vinegar over the mixture, and sprinkle garlic powder on top. Mix well to combine.
5️⃣ Season with salt and pepper to taste, then chill in the refrigerator for 1 hour to allow the flavors to meld.
Notes
- For an extra burst of flavor, try adding a splash of lemon juice or a pinch of crushed red pepper flakes.
- No orecchiette? Substitute with any small pasta like bow ties or penne.
- This salad is best served fresh—avoid freezing for optimal texture and flavor.
