Description

These Cheesesteak Stuffed Peppers combine all the flavors of a classic cheesesteak in a healthy, low-carb bell pepper shell


Ingredients

For the Peppers:

  • 4 large bell peppers (red, yellow, orange, or green)
  • 12 tbsp olive oil

For the Filling:

  • 1 lb thinly sliced ribeye or sirloin steak (or ground beef for a simpler option)
  • 1 medium onion, thinly sliced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • Salt and pepper, to taste
  • Optional: Red pepper flakes or hot sauce for heat

For the Cheese:

  • 8 slices provolone cheese (or your preferred cheese: mozzarella, cheddar, or cheese sauce)

Instructions

Step 1: Preheat the Oven

  • Heat your oven to 375°F (190°C).

Step 2: Prep the Peppers

  1. Slice the bell peppers in half lengthwise and remove the seeds and white membranes.
  2. Brush the peppers lightly with olive oil and place them cut-side up on a baking sheet.
  3. Bake for 10 minutes to soften slightly before stuffing.

Step 3: Cook the Filling

  1. Heat olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and cook until browned and tender. Remove the beef and set aside.
  2. In the same skillet, sauté onions, mushrooms, and garlic for 5–7 minutes, until golden and caramelized.
  3. Return the beef to the skillet, combine with the veggies, and season with Worcestershire sauce, salt, and pepper. Add red pepper flakes or hot sauce for spice, if desired.

Step 4: Stuff the Peppers

  1. Line each pepper half with a slice of cheese.
  2. Fill the peppers with the beef and veggie mixture, pressing gently to pack the filling.
  3. Top with another slice of cheese or a generous sprinkle of shredded cheese.

Step 5: Bake

  • Return the stuffed peppers to the oven and bake for 15–20 minutes, or until the cheese is melted and bubbly.

Step 6: Serve

  • Remove from the oven, garnish with fresh parsley or chives, and serve hot. Enjoy!
