  • 1/2 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/2 cup milk
  • 1/2 cup melted butter
  • 2 large eggs
  • 1 tsp vanilla extract

For the Streusel Topping:

  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/4 cup flour
  • 1/4 cup cold butter (cut into small pieces)

Optional Add-ins:

  • Chopped nuts (pecans or walnuts)
  • Small apple chunks or blueberries
  • Chocolate chips

Instructions

1️⃣ Prepare the Muffin Batter:

  • Preheat oven to 375°F (190°C) and line a muffin pan with paper liners.
  • In a large bowl, mix flour, sugar, baking powder, salt, and cinnamon.
  • In another bowl, whisk together milk, melted butter, eggs, and vanilla until smooth.
  • Gradually fold the wet ingredients into the dry mixture. Stir gently; avoid over-mixing.

2️⃣ Make the Streusel Topping:

  • In a small bowl, combine brown sugar, cinnamon, and flour.
  • Add butter pieces and mash with a fork or your fingers until the mixture forms small crumbs.

3️⃣ Assemble and Bake:

  • Fill muffin cups two-thirds full with batter.
  • Generously sprinkle streusel topping over each muffin, pressing lightly to help it stick.
  • Bake for 18-22 minutes, or until a toothpick inserted in the center comes out clean.
  • Let cool for 5 minutes in the pan, then transfer to a rack to cool completely.

Notes

  • To keep muffins moist, don’t overmix the batter; a few lumps are fine.
  • For a fruit-filled twist, fold in 1/2 cup diced apples or blueberries.
  • Streusel crumbs too sticky? Pop them in the fridge for 5 minutes before topping.
