Scale
Dough:
- 2 tbsp butter
- 1 cup milk
- 3 tbsp sugar
- 1 tsp salt
- 1/2 cup active sourdough starter
- 3 cups + 2 tbsp bread flour
- 1 tbsp melted butter (for brushing after baking)
Instructions
- Prepare Starter: Feed your sourdough starter the night before and let it rise until bubbly.
- Mix Dough: In the morning, melt butter with milk, sugar, and salt. Let cool. Add flour and sourdough starter to the cooled liquid and mix. Let rest for 1 hour.
- Stretch and Fold: Perform 3 sets of stretch and folds, resting the dough for 30 minutes between each set. Let the dough rise for 2 hours until it increases in size by 50%.
- Shape Rolls: Divide the dough into 12 pieces, shape into balls, and place in a greased baking dish. Cover and let rise for 3-4 hours until puffy.
- Bake: Preheat oven to 375°F (190°C). Bake for 25-30 minutes until golden brown. Brush with melted butter after baking.
Notes
Store the rolls at room temperature for up to 3 days or freeze for up to 3 months.
