Description

These homemade sourdough dinner rolls are warm, buttery, and delicious. They have a soft, pillowy texture and a hint of tangy sourdough flavour.

Dough:

  • 2 tbsp butter
  • 1 cup milk
  • 3 tbsp sugar
  • 1 tsp salt
  • 1/2 cup active sourdough starter
  • 3 cups + 2 tbsp bread flour
  • 1 tbsp melted butter (for brushing after baking)

Instructions

  1. Prepare Starter: Feed your sourdough starter the night before and let it rise until bubbly.
  2. Mix Dough: In the morning, melt butter with milk, sugar, and salt. Let cool. Add flour and sourdough starter to the cooled liquid and mix. Let rest for 1 hour.
  3. Stretch and Fold: Perform 3 sets of stretch and folds, resting the dough for 30 minutes between each set. Let the dough rise for 2 hours until it increases in size by 50%.
  4. Shape Rolls: Divide the dough into 12 pieces, shape into balls, and place in a greased baking dish. Cover and let rise for 3-4 hours until puffy.
  5. Bake: Preheat oven to 375°F (190°C). Bake for 25-30 minutes until golden brown. Brush with melted butter after baking.

Notes

Store the rolls at room temperature for up to 3 days or freeze for up to 3 months.
For a vegan option, use non-dairy milk and butter.
