This super simple sourdough discard banana bread is a fantastic way to use overripe bananas and sourdough discard. Moist, sweet, and perfect for a quick snack or breakfast treat!
Ingredients
- 250g overripe bananas (about 3 medium bananas)
- 1 egg
- 1 tsp vanilla extract
- 80g melted butter
- 100g sourdough starter discard
- 200g all-purpose flour
- 2 tsp baking powder
- 100g brown sugar
- 50g white sugar (optional)
- Pinch of salt
- 20g golden syrup (for brushing after baking)
Instructions
1. Preheat your oven to 350°F (180°C). Mash the bananas with a fork until mostly smooth.
2. Lightly beat the egg and vanilla, then mix into the mashed bananas.
3. Melt the butter and add it to the banana mixture, followed by the sourdough discard. Stir to combine.
4. mix the flour, baking powder, sugars, and salt in a separate bowl. Add the dry ingredients to the wet mixture and stir until just combined.
5. Pour the batter into a buttered loaf tin and bake for 1 hour until a skewer inserted comes out clean.
6. Brush the top with golden syrup while warm for a sweet glaze. Let cool for 30 minutes before removing from the tin.
Notes
- Always use overripe bananas for sweetness and better texture.
- Add extras like chocolate chips, nuts, or butterscotch chips for a fun twist!
