- 1/2 tsp fine sea salt
- 2 tsp baking powder
- 1 tsp baking soda
Wet Ingredients:
- 1 cup sourdough starter (discard or active)
- 2 large eggs
- 1 cup milk (plus more as needed)
- 3 tbsp melted unsalted butter (or oil)
- Extra butter for the skillet
To Serve:
- Pure maple syrup
- Fresh berries
- Powdered sugar
Instructions
Overnight Prep for Fluffy Pancakes:
- Mix wet ingredients (except baking powder and soda) with dry ingredients. Chill overnight.
- In the morning, add baking powder and baking soda, then whisk. Let the batter sit for 5 minutes before cooking.
Same-Day Prep:
- Mix all dry and wet ingredients in a bowl. Whisk until smooth, leaving some lumps.
- Heat a skillet over medium-low heat, melt a pat of butter, and pour in 1/3 cup batter. Cook 1-2 minutes per side.
- Keep pancakes warm in a 250°F oven as you cook the rest.

- For crispy edges, cook pancakes in butter.
- Use a wide spatula to make flipping easier and prevent splatters.
