Description

These Sourdough Tortillas are light, soft, and perfect for wraps, tacos, or quesadillas. Made with just five basic ingredients, they are easy to incorporate sourdough into your meals.


Ingredients

Scale
  • 1 cup sourdough starter (210g)
  • 3/4 cup water (160g)
  • 1/4 cup olive oil (60g)
  • 1.5 tsp salt (11g)
  • 3 cups all-purpose or whole wheat flour (420g)

Instructions

  1. Mix sourdough starter, water, olive oil, salt, and flour in a stand mixer with a dough hook for 2-3 minutes, or knead by hand for 5 minutes. The dough should be slightly elastic.
  2. Cover the dough in a greased bowl at room temperature for 12-24 hours.
  3. Divide the dough into 12 equal parts. Roll each ball into a thin, 1/4-inch tortilla on a lightly floured surface.
  4. Cook tortillas in a preheated cast iron skillet with a bit of oil for 1 minute on each side until lightly browned.

Notes

  • For fluffier tortillas, use all-purpose flour.
  • You can use either an active sourdough starter or discard for this recipe.
